Who better to ask about dining out than the people who own the restaurants, especially when they’re talking about someone else’s eatery? The Dish asks a different restaurateur each week for their three favorite menu items at another restaurant. Two of them have to be local. All of them are bound to be good.

This week’s Disher: Marcel Desaulniers, Chef and Partner of the Trellis. Marcel is known globally for his books, television career and many culinary awards. The author of Death by Chocolate, as well as eight other culinary publications doesn’t get out of the kitchen very often, and could only offer us two suggestions – but both are worth it.

Number 1

Marcel’s favorite special occasion restaurant here in Williamsburg is the Williamsburg Inn. His favorite dish there is the Lobster Bisque, which has a rich, creamy lobster base with a beautiful orange/red color, and it is sprinkled on the top with chunks of lobster meat. He gets it whenever he goes there for his anniversary or a birthday celebration.

Number 2

Marcel’s favorite dish outside of Williamsburg is the Fried Calamari at the Union Square Café in New York City. He compares all calamari to the Union Square’s, and so far nobody else has been able to match its flavor and crunchy fried texture.

About our Disher

The Trellis has been a Williamsburg destination since 1980. A review from Fodor’s describes the dining experience well: With vaulted ceilings and hardwood floors, the Trellis is an airy and pleasant place. The imaginative lunch and dinner menus change with the seasons. A good wine list complements such dishes as homemade tomato bisque, wild boar, and soft-shell crabs. The seafood entrées are particularly good, and many patrons wouldn’t leave without ordering the rich Death by Chocolate, the restaurant’s signature dessert. The Trellis is now offering a special “Ready to Go” menu on Saturdays during the Farmers Market in Merchants Square.

    We’re all holding on to our wallets tightly in this recession, but when I dine out , I want to DINE OUT! I want great food and even better service. Don’t start reviewing cheap places b/c Jimbo says so. Please. Just give us THE real DISH!
